EASY OATMEAL BREAKFAST MUFFINS

Do you know the feeling of busy mornings? Try these fulfilling breakfast muffins – which you can also bring with you on the go and you also enjoy them as an in-between meal. Bake them while getting ready for your day.

Bake your oatmeal as muffins instead of eating it served in a bowl as usual. You can either choose to make a large portion of oatmeal, and bake excess as muffins for snack or breakfast for several days. You can also use the same ingredients, but simply mix it together in a bowl and pour into silicone muffin cups

ADDITIONAL INGREDIENTS FOR TOPPING:

If you find that the oatmeal is too ‘liquid’, then add extra oats.

HERE’S HOW YOU DO IT:

  • Preheat your oven at 200C /400F
  • Add your the cooked oatmeal in the muffin cups and add the berries, nuts and bar pieces.
  • Bake your muffins until golden – approx. 20-30 min.
  • Take them out of the oven and let them cool down before taking them out of the cups so the texture will become more firm.

TIP: Feel free to use silicone molds so muffins are easier to get out. You can bake a larger portion and store them in the fridge or freezer for your busy days. They are good as a filling breakfast or as an easily filling snack or snack.
