PORTOBELLO PIZZA

WHO DOESN’T LOVE PIZZA? WE DO! So here is a fun, and healthier way to have a pizza snack with Portobello as a main ingredient. More veggie, lots of taste, less calories. And you can top your Portobello Pizzas with your favourite toppings. If you own a BBQ Grill, try making them on a grill too. It’s a great appetizer, a side dish or just as a snack.

TIME: 15-20 MINUTES

INGREDIENTS:

  • 5 x portobello mushrooms
  • 5 x tbsp pizza sauce / tomato sauce
  • Olive oil (To marinate the Portobello)
  • 5 teaspoons green pesto
  • 100g low fat grated mozzarella cheese
  • Cherry tomatoes / olives
  • Salt
  • Oregano
  • Fresh basil (not a must)

INSTRUCTIONS:

  1. Turn on the oven at 200C / 400F.
  2. Clean and dry the Portobello mushrooms and remove the stalk.
  3. Brush the mushrooms lightly with oil and bake them on a sheet in the middle of the oven for 5 minutes.
  4. Take them out and add tomato sauce, pesto, fresh tomatoes, salt, oregano and grated mozzarella.
  5. Bake in the oven again for around 12-15 minutes (until the cheese is melted and golden)
  6. Top them off with a fresh basil leaf.
