Pumpkin Spice is an indispensable flavor in autumn. Here is the recipe for delicious, our version of healthier pumkin-spice cookies with natural ingredients. These delicious cookies can be enjoyed as a snack, as an in-between or just as a tasty treat. They fill up well and satisfy the snack cravings.

RECIPE FOR 15 SMALL COOKIES:
INGREDIENTS:
- 150 grams of cooked pumpkin or pumpkin puree (or a large ripe banana)
- 80 grams of rolled oats (you can use gluten-free to make the recipe gluten-free)
- 1 tsp of cinnamon and 1 tsp of ginger powder (if you have nutmeg at home, then add some of that too)
- A dash of sea salt
- 1 natural protein bar chopped into small pieces
- For more sweetness add in 2 tbsp of maple, agave,- or date syrup
You can also combine pumpkin and banana or bake them with pure banana. You can also add in 2 tbsp of grated coconut or 1 tbsp of coconut oil for more taste and crisp.
DIRECTIONS:
- Heat your oven to 180 degrees fan / 200 degrees conventional oven.
- Chop up your favourite bar.
- We cooked the pumpkin by chopping it up into cubes and boiled it. You can use the pumpkin for so many different recipes – soup, puree, muffins, pancakes, oatmeal etc.
- Mix all of the ingredients well in a bowl
- Shape them into small cookies on a bake sheet
- Bake for approx. 15 minutes until they are golden.
- Let them cool for 10 minutes.
