Here is one of our favorite recipes, which is a delicious way to enjoy spinach – our delicate and simple spinach waffles. You can enjoy them as a simple lunch or dinner. Serve the waffles with a fresh salmon spread, smoked salmon or tuna spread..

RECIPE FOR 4-5 WAFFLES
TIME: 15-20 MINUTES
INGREDIENTS:
- 3 eggs (you can replace with pure egg white for a version with lower calorie / lower fat content, or make half whole eggs, half egg white)
- 65 g oats
- 120 g Spinach – Fresh or frozen that has been thawed (make sure to remove the excess water if you use from frozen)
- 1 Tbsp of olive oil
- 100 ml water or milk of your choice
- 1/2 tsp salt
INSTRUCTIONS:
- Blend all the ingredients above
- Heat your waffle iron and make sure to grease it a little bit, so the waffles do not stick to the iron.
- Bake the waffles until golden (if you have a timer on your waffle iron, us that – if not, then bake the waffles a couple of minutes. Be careful not to fill up the waffle iron with the batter completely, unless you want batter all over your kitchen 😉
- Serve the waffles with a fresh salmon spread, smoked salmon or tuna spread and fresh tomatoes.
TIP: You can also bake the above recipe as pancakes instead.
